What General Equipment Do I Need?
All these recipes require:
- 1 strainer,
- 1-2 bowls that can hold the strainer,
- 1 cheese cloth, that is actually either a large plain white cotton handkerchief, or a white non-terry cotton dish towel. Always sterilize it before use by rinsing it in boiled water.
Some of the recipes needs an extra thing or two.
How To Make Cheese From Sour Cream.
In this recipe we’ll use sour cream instead of milk. Sour cream is already a milk product of lactic-acid bacteria, so all we basically need to do is drain the whey from it.
Ingredients & Equipment:
- 1 quart of sour cream (1 liter),
- 1 strainer,
- 2 bowls,
- 1 cheese cloth,
- Flavoring according to your taste: salt, pepper, herbs, spices, onions, olives, etc.
Instructions:
- Pour the sour cream into a bowl and mix with whatever flavors you like.
- Put the cheese cloth over the strainer and put the strainer over the second bowl.
- Pour the sour cream mixture into the strainer.
- You can use the extra side tips of the cloth to cover the mixture.
- Put everything in the fridge, and wait 1-3 nights.
- The more you wait, the harder the cheese will get.
How to make cheese from yogurt (Labaneh).
This recipe is a bit similar to the previous one. Yogurt is also a lactic-acid bacteria product and a great resource for more sour cheeses.
Ingredients & Equipment:
- 1 quart of yogurt (1 liter),
- 1 tablespoon of salt,
- 1 strainer,
- 2 bowls,
- 1 cheese cloth.
Instructions:
- Pour the yogurt into a bowl and mix the salt throughly into it.
- Put the strainer over the second bowl and put the cloth over the strainer.
- Pour the yogurt mix into the cloth.
- Use the extra side tips of the cloth to cover the mixture.
- Leave the mixture outside in room temperature for 24 hours.

Good! You were paying attention! I was just pointing out how to make cheese in even easier ways than the “regular” easy cheese recipes that rely on milk. But a promise is a promise, and here’s a simple milk-based recipe perfect for lemon lovers.
Ingredients & Equipment:
- Half a gallon of pasteurized milk (you can use your regular milk),
- Juice out of small 4 lemons,
- 1 pot (preferably a stainless steal one with a think bottom),
- 1 strainer,
- 2 bowls,
- 1 cheese cloth.
Instructions:
- Pour the milk in the pot and heat it up to 165F while stirring often.
- Add the lemon juice and stir.
- Take off the stove and wait for 15 minutes. The milk is slowly separating.
- Put the strainer over the bowl and put the cloth over the strainer.
- Pour the warm milk into the strainer, and leave it to drain for about an hour.
Your cheese is ready! You can add a bit of salt and other herbs to balance its lemon flavor.
